Leftover Cobbler

This is such a versitle, hearty dish that uses any vegetables, soups, stews, bean dishes, stir-frys, potatoes or rice on hand, adding a fresh and homey topping of corn bread!  Also a great potluck casserole offering.

Walnut Roast

This is an improvement on meat loaf, and can be the centerpiece of holiday meals as well.

Stuffed Cabbage (or Peppers)

This is a comforting, traditional eastern European dish that tastes every bit as good as my baba's (grandma's)!  Feel free to switch the pilaf stuffing to any left over grain, squash or potato in the fridge!

Oil-Free Italian Dressing; and a bunch of oil substitutes

The taste of this familiar dressing comes from the seasoning.  When we allow our tastebuds to get used to the flavors of spices without a film of fat, they pop!
Included here are many oil substitutes to use in adapting any favorite dressing or sauce

Peanut-Delicious Dressing and Sauce

This is such a rich and satisfying dressing, with a Thai feel to it.  Note that it is a higher fat dressing. Also note that this can be the base for a Thai noodle and veggie dish! Udon noodles or angel hair work well. Saute veggies and add sauce and noodles. Top with a few peanuts if desired.

Thousand Island

An American Classic

Creamy Ranch

This traditional American dressing can be used as a dressing or a dip, depending on the amount of water added

Kathy’s Kale Chips

Kale chips are becoming more and more popular, but have you noticed how much a bag in the store costs? There’s no need to break the bank to have this tasty, crunchy treat that’s a superb alternative to potato chips.

Kathy’s Macaroni and "Cheese" Casserole

Warm, gooey, oozy mac n cheese is a dish most of us have grown up with for countless lunches and dinners at home. Who wants to give that up? Well, no need! Enjoy the warm deliciousness with this healthy take on a traditional comfort food.  This is kid-approved in many households and a great potluck dish

Creamy Mayo

Tofu, nuts and seeds are great replacements to make creamy things.  They are so versatile and satisfying, it's empowering to make your own!
