Creamy Mayo

Tofu, nuts and seeds are great replacements to make creamy things.  They are so versatile and satisfying, it's empowering to make your own!

Ingredients: 
  • 1 box silken tofu (or regular in a tub– anything works except extra firm)

  or

  • ½ C cashews soaked in hot water for 5 minutes

  • 2 T lemon juice, or ½ tsp vinegar
  • ½  teaspoon salt
  • 1 teaspoon sweetener like rice syrup, barley malt or maple syrup, (optional)
  • Pinch of onion powder
  • Pinch of salt or splash of soy sauce
Instructions: 

Drain tofu or cashews.  Add all ingredients into a blender and blend until smooth
