Lemon Rice Kale Soup

This is one of my favorite recipes.  It is light and satisfying at the same time.

Ingredients: 
  • 1 small onion or 3 scallions chopped
  • 3 c chopped kale
  • ½ tsp garlic powder
  • 1/8 tsp turmeric
  • 1/8 tsp pepper
  • 1/3 C broth
  • 3 C cooked rice
  • 8 C broth or water
  • ½ C nutritional yeast
  • 1 T soy sauce
  • Juice of 1 lemon
Instructions: 

In a large pot, sauté onion, kale and seasonings in 1/3 C broth for 15 minutes.  Add the rest and simmer 5 minutes more.  
Blend some or all of the soup in a blender, if you'd prefer a creamy texture/
