Marcia's Four-Bean Salad

Here’s a handy picnic recipe. Pick four cans of beans: preferably low sodium. (I use 2 green, 1 yellow & 1 salad)

Ingredients: 
  • Green beans
  • Yellow waxed beans
  • Mixed salad beans
  • Kidney beans
  • Garbanzo beans
  • Pinto beans
  • 1 small red onion, chopped finely, or 4 scallions
  • 1/2 C water with 3 tablespoons flax meal mixed in
  • 2/3 C vinegar
  • 1/3 C sweetener (I use dates and water whizzed into a syrup)
  • 1 tsp tarragon
  • ½ tsp pepper
  • Dash of salt (optional
Instructions: 

Drain and rinse 4 cans of beans.

Mix all ingredients together well. 

Let it sit in fridge overnight.
