Portabella Sandwiches or Burgers

I would call this a fun-burger.  The texture of a thick, juicy mushroom is very satisfying, and works well in a bun!  Fix it up with burger toppings and you'e got an enjoyable meal!

Ingredients: 
  • Leftover large, cooked Portabella mushroom
  • Whole-grain or sprouted bread or bun
  • Sliced tomato
  • Lettuce leaves
  • Sliced Onion
  • Mustard, ketchup or condiments of choice
Instructions: 

Assemble mushroom in bread with fixings and pack for lunch or anytime.
To cook mushrooms:
Cover the bottom of a frying pan with any, or a mix, of the liquid above, along with a few dashes of spice. Heat to just medium. Place mushrooms in the pan and cook for about 8 minutes on medium heat, not hot. -  It depends on how thick the mushrooms are.  You may need to lower heat, and add more liquid – splash with vinegar or broth.  Keep a touch of liquid in the bottom of the pan as the mushrooms cook, and allow them to brown but not blacken.  Flip the mushrooms and cook for approximately another 5 minutes, using the same guidelines.
Serving Suggestions: 
-- Place on whole-grain burger buns and add your favorite condiments for a great burger, or on the plate for a great steak!
-- Serve with mashed potatoes, frozen vegetables and a hearty salad.
