Veggie Barley Stew

A basic stew using this ancient grain that deserves attention!
Barley has a chewy texture, like pasta.

Corn Chili

Chili is one of the most satisfying and filling meals, good for lunch, for dinner, and for snacks. Here's a basic, hearty chili recipe brimming with vegetables. This actually isn't hot, but you can up the spice if you prefer hotter flavors by adding hot red pepper flakes.

Ethiopian Red Lentils

This dish exemplifies how the plant-based diet can expand the standard Western palette with exotic ethnic tastes!

Lovely pinkish red lentils don’t hold their shape when cooked and become thick and saucy, like a thick soup or stew.

Cuban Black Beans, (and basic bean-cooking instructions)

A very basic bean recipe -try it with any other variety.  This is how you cook dried beans.

Soaking and then draining beans reduces the undigestible sugars (oligosaccharides) that may lead to gas buildup in our lower intestines, potentially resulting in flatulence. Honestly, this lessens the more we have beans in our daily diet.  If beans are new to your diet, add them into your daily routine incrementally.

Chickpea Curry

Here's a basic curry recipe with lots of room for variation.

Basket of Jewels

Eating the rainbow is so beautiful! Meals can be incredibly simple – there’s no need for a lot of prepping and cooking. Put a bunch of vegetables in a steamer, add a cooked grain and a sauce and voilà - dinner! Try your jewelws with rice and Peanut Sauce, Thousand Island, or Creamy Ranch.

Cruciferous Curry

Here's a basic curry recipe that highlights broccoli and cauliflower, but don't limit yourself!

Leftover Cobbler

This is such a versitle, hearty dish that uses any vegetables, soups, stews, bean dishes, stir-frys, potatoes or rice on hand, adding a fresh and homey topping of corn bread!  Also a great potluck casserole offering.

Walnut Roast

This is an improvement on meat loaf, and can be the centerpiece of holiday meals as well.

Stuffed Cabbage (or Peppers)

This is a comforting, traditional eastern European dish that tastes every bit as good as my baba's (grandma's)!  Feel free to switch the pilaf stuffing to any left over grain, squash or potato in the fridge!
