Walnut Mushroom Pâté

So easy yet flavorful - I make this all the time an use it as a savory spread or filling for wraps or sandwiches. It's delicious on top of rice snaps or oil-free whole-grain crackers, or on a whole-grain bagel. 
Experiment with spices or chopped celery, ground pepper or bell peppers to add chunk and make it your own!

This elegant dish pops with color and is so simple to make.

Cashew Cream

This deceptively easy and deliciously rich, dairy-free alternative to cream, which can be as saucy or stiff as desired.  A blender or food processor is essential.
 
Use in a parfait with layers of berries, (defrosted or fresh); or on fruit, on top of granola or muesli or as a bagel shmear.

Ginger Broccoli with Cashews

This baked dish uses the taste of nutritional yeast to add zesty, cheesy flavor without added fat or dairy. Baked eggplant just melts in your mouth - make sure to bake long enough to soften thoroughly

Plant-Based Convenience Cooking

PLANT-BASED PRACTICE:  Look at the ingredients list.  Select items in boxes, bags or packages with just a few whole plant ingredients listed, (like 5 or less), avoiding added sugars, fats and oils, additives like preservatives, colorings or protein powders, sodium or salt, or stuff that you can’t pronounce.  Keep it simple.

Banana Ice Cream

This sweet treat is rich and creamy. It gives the satisfaction of ice cream without the heavy after-effects. It’s incredibly simple to make and is ready to take on other flavors if desired. Variations include strawberry, vanilla, peanut butter with chocolate, cinnamon, berry, pecan… you come up with your own!
