Here's a basic curry recipe that highlights broccoli and cauliflower, but don't limit yourself!

Stuffed Cabbage (or Peppers)

This is a comforting, traditional eastern European dish that tastes every bit as good as my baba's (grandma's)!  Feel free to switch the pilaf stuffing to any left over grain, squash or potato in the fridge!

The taste of this familiar dressing comes from the seasoning.  When we allow our tastebuds to get used to the flavors of spices without a film of fat, they pop!
Included here are many oil substitutes to use in adapting any favorite dressing or sauce

Cashew Cream

This deceptively easy and deliciously rich, dairy-free alternative to cream, which can be as saucy or stiff as desired.  A blender or food processor is essential.
 
Use in a parfait with layers of berries, (defrosted or fresh); or on fruit, on top of granola or muesli or as a bagel shmear.
