Marcia's Four-Bean Salad

Here’s a handy picnic recipe. Pick four cans of beans: preferably low sodium. (I use 2 green, 1 yellow & 1 salad)

Hummus Plate

Hummus or Middle Eastern chickpea spread is so satisfying and versitile, as a snack with veggies and rice snaps, in a wrap or sandwich, a stuffing for mushroom appetizers, or diluted for a salad dressing!  It's easy to keep it low-fat by abstaining from adding oils.  If you need to control weight, avoid further added fat by eliminating the tahini (sesame butter).

Kitchen Sink Salad

Be brave! An unplanned salad can be just as delicious as one from a recipe. Salads with a simple dressing are great vehicles for leftovers and makeovers, and often turn out tastier than you ever expected. Getting raw vegetables in everyday will fill you up and boost your immune system, so try experimenting. Bell pepper? Tomatoes? Fruit? Beans? Pasta? Throw it together!
