This is one of my favorite recipes. It is light and satisfying at the same time.
Ingredients:
- 1 small onion or 3 scallions chopped
- 3 c chopped kale
- ½ tsp garlic powder
- 1/8 tsp turmeric
- 1/8 tsp pepper
- 1/3 C broth
- 3 C cooked rice
- 8 C broth or water
- ½ C nutritional yeast
- 1 T soy sauce
- Juice of 1 lemon
Instructions:
In a large pot, sauté onion, kale and seasonings in 1/3 C broth for 15 minutes. Add the rest and simmer 5 minutes more.
Blend some or all of the soup in a blender, if you’d prefer a creamy texture
