Enjoy this baked French classic without animal products. This cheesy sauce can also be used in other recipes that use cheese. It’s also good over baked potatoes, steamed vegetables and grains!

Ingredients:

  • 2 packages frozen spinach, thawed & drained
  • 2 aseptic packages of silken, firm Tofu
  • 2 tsp salt (optional)
  • ¼ tsp garlic powder
  • ½ tsp onion powder or flakes

Pimento Cheesy  Sauce

  • 1 C water
  • 1 tsp onion powder
  • 3 T nutritional yeast flakes
  • 4 oz. jar of pimentos
  • 1 C cashews
  • 1 tsp salt
  • Juice from 1 lemon

Instructions:

Preheat oven to 350°F.

For the Pimento Cheesy Sauce: Place everything in the blender and blend until smooth.

For the Souffle: Mix everything but Cheesy Sauce in large bowl. Place in 9″ x 12″ pan, glass works well, or coat with parchment paper, and pat smooth. Bake at 350° for 30 minutes. Pour 2 cups of Cheesy Sauce on top. Continue baking until cheese sauce is bubbly and lightly browned.
