This is an improvement on meat loaf, and can be the centerpiece of holiday meals as well.

Ingredients:

  • 1 medium onion chopped fine
  • 1 ½ C unsweetened soymilk or other plant milk
  • 1 ½ C whole grain breadcrumbs, Matzah meal, or ground oats
  • 1 C ground walnuts
  • 1 t salt
  • 2 T parsley
  • 1 T Egg Replacer powder
  • 1 T ground flax seeds

Instructions:

Preheat oven to 350°F.
Sauté onions in a frying pan with a splash of orange-carrot juice, broth or other liquid.  Mix in all  other ingredients, mixing well.   Turn into a coated (or lined with parchment paper) loaf pan and let stand for 30 minutes.  Bake for about an hour. It should turn lightly brown on top and should feel liquidy to the touch. It may take more cooking time if it’s in a smaller, deeper dish.

Variations:  substitute almonds for walnuts; add 2 T tomato paste.
