This is such a rich and savory dish with the walnuts lending a deep, meaty flavor. Try it substituting other nuts or sunflower seeds
Ingredients:
1 medium onion chopped fine
1½ cups whole grain breadcrumbs, matzah meal or ground oats
1½ cups unsweetened soymilk
1 cup ground walnuts
1 t salt
2 tablespoons parsley
1 tablespoon Egg Replacer powder*
1 tablespoon ground flax seeds
Instructions:
Preheat oven to 350°F.
Sauté onions in a Teflon frying pan or pan sprayed with canola oil. Mix all ingredients together. Turn into oiled baking dish and let stand for 30 minutes. Bake for 1 hour.
*If you don’t have this product, substitute 2 teaspoons potato starch and 1 teaspoon baking powder
Variations:
1. Substitute almonds for walnuts; add 2 tablespoons tomato paste
2.Add 1 teaspoon each of basil and oregano and spread a light coating of ketchup on top before baking
