Here’s a handy picnic recipe. Pick four cans of beans: preferably low sodium. (I use 2 green, 1 yellow & 1 salad)
- Green beans
- Yellow waxed beans
- Mixed salad beans
- Kidney beans
- Garbanzo beans
- Pinto beans
- 1 small red onion, chopped finely, or 4 scallions
- 1/2 C water with 3 tablespoons flax meal mixed in
- 2/3 C vinegar
- 1/3 C sweetener (I use dates and water whizzed into a syrup)
- 1 tsp tarragon
- ½ tsp pepper
- Dash of salt (optional
Drain and rinse 4 cans of beans
Mix all ingredients together well.
Let it sit in fridge overnight.
