There may be nothing more comforting than creamy, warm mashed potatoes. This recipe keeps the richness and buttery flavor with no animal fat or dairy at all.

Irresistable at any age!

Ingredients:

  • 4 or so Cubed potatoes, any will do, but Yukon gold or russets have the traditional taste and starchiness
  • Spices of your choice, including pepper, garlic powder, lemon pepper, onion flakes, parsley (fresh, chopped herbs are great too)
  • 1-2 T nutritional yeast
  • 1 tsp miso or a splash of soy sauce or Tamari
  • ¼ cup or so of almond or soy milk

Instructions:

Steam potatoes until quite soft, or simmer in an inch of water.  Mash potatoes and the rest of ingredients in a few tablespoons of the cooking water.  Mash until really smooth, or leave a bit lumpy – your call.
